Herb-Infused Fried Potato Squares

Ingredients

  • 4 large potatoes
  • 2 cups fresh chopped parsley
  • 1 tablespoon chicken broth or mashed green onions
  • 2 tablespoons cornstarch
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Oil for frying

Preparation

Preparing the Potatoes:

  1. Peel and grate the potatoes using a fine grater.
  2. Place the grated potatoes in a strainer, then wrap them in a paper towel or a clean cloth, and squeeze out as much moisture as possible.

Mixing the Ingredients:
